I can definitely relate, that's why (in the process of discovering how it works), I created these documents in the first place!
But you are right, workflow aspects are mostly missing. I had ideas to include more on workflows as well, but that hasn't materialized.
CafeTran offers many options to the user, but this is also a curse of sorts, as they need to figure out the best way to make use of its features on their own. And if some features are more or less intuitive, others... less so. At least one can't say it's a copycat!
OmegaT, being Libre/Open Source, is developed collaboratively and generally, that also means documentation is given more prominence. It's definitely a worthy program, and I had considered it seriously back in the day.
Some years a go, CafeTran's developer did offer a manual, but I guess the rate of development and the nature of the changes made it near impossible to keep updating. Now, I believe the software has reached a level of stability/maturity though. So that's how it is for now...
